Chicken Cordon Bleu Casserole

This freezes great.  Cook your chicken breasts in the crockpot and then put them in the fridge until you're ready to make this recipe.  I try to make this recipe when we have a huge ham leftover.  That way I'm not spending any extra money, we're just using what's on hand.



Chicken Cordon Bleu Casserole
1-1/2 lbs cooked boneless chicken breasts, cut into 1" cubes
1-1/2 cups chopped or sliced ham
2 cups grated Swiss cheese
1 can cream of chicken soup
finely crushed bread crumbs or finely crushed butter crackers

Butter a 2 quart casserole dish.  Sprinkle bread crumbs or cracker crumbs over the bottom.  In a large bowl, mix together the chicken, ham, cheese, soup and water.  Pour over the crumbs in the dish and sprinkle the top with more bread crumbs or cracker crumbs.

Bake at 350 degrees for 40 minutes, serves 4.  Definitely serve this over rice or noodles.  It's sort of a "soupy" kind of casserole. 

If you choose to freeze this, mix everything together (except the crumbs) and pour into a gallon food freezer storage baggie.  Put the crumbs in a smaller baggie and keep them together in the freezer.

To bake, thaw the baggie in the refrigerator overnight.  When thawed, proceed with the above instructions.

I love this dish! We use a honey mustard dressing rather than the soup in ours and make it in the crockpot. I like the crunchy topping of the bread crumbs in your recipe! Yum.
