I tweaked the original recipe for Chewy Granola Bars since I was in the mood for peanut butter. They turned out delicious!
Chewy Peanut Butter Granola Bars
1/2 cup melted butter
1/2 cup softened peanut butter (I bet crunchy would be good too!)
1/3 cup brown sugar
1 cup honey
1 teaspoon vanilla extract
4 cups oatmeal (doesn't matter if it's quick oats or old fashioned)
1 cup rice krispie cereal
1/2 cup whole wheat flour
1 teaspoon baking soda
1/2 cup Reese's mini Baking chips (optional, but really good!)
In large mixing bowl, combine melted butter, peanut butter, brown sugar, honey and vanilla extract. In separate bowl, combine oatmeal, rice krispie cereal, flour, baking soda and mix well. Add Reese's mini Baking chips and mix well. Pour honey mixture over oatmeal mixture and stir well. It will be very sticky. Spread mixture into a 13x9 baking dish. Bake at 325 degrees F for 20 minutes, reduce heat to 300 degrees F for 10 minutes. Remove and cool on the counter. Once it's cool enough to handle, cut them into bars, wrap them in tin foil and store in freezer or fridge.

Thank you so much for posting this recipe and the chewy granola bars. I have made both and my husband and kids love them. My husband actually told me there was no reason to buy the Quaker Chewy Granola Bars anymore, these are 100% better and no preservatives. Thank you again.

I made two different batches of granola bars last weekend, first one was the peanut butter ones but I added Reese's Peanut Butter chips. Second batch I made as "magic bars" used the chewy granola bars and added, coconut, walnuts, and butter scotch chips, when they came out of the over I sprinkled a few mini chips on the tops and spread them out. They are so yummy.
The problem I have is, the peanut butter bars came out super crumbly and I made the two batches exactly the same. Have you run into this problem?
I have had the granola bars come out crumbly. I think it was because I used quick oats and not old fashioned. My mom uses old fashioned every time and hers are delicious, and she uses my recipe here.
Thanks Candi I will have to check that. I am trying to find craisins on sale so I can try fruit and nut ones also. My family is loving this recipe.
My family loves these granola bars! I actually started making them to get my daughter to eat oatmeal. I added chocolate chips, pieces of almonds, and mini m&m's. She loves them. My husband is also addicted! Thanks so much for sharing such a great recipe!
