In the Summer of 2009, Pappy had grown some delicious lettuce in his garden. They were a little bitter and I thought they would taste delicious with a mustard-y vinaigrette. I thought I was being brilliant when I came up with this tasty recipe. When Nana tasted it, she was so excited. She said it tasted exactly like Grandmother Bell's dressing. She is your Great-Great Grandmother.
Grandmother Bell's Vinaigrette
1 Tablespoon honey mustard
1 Tablespoon honey
3 Tablespoons apple cider vinegar
sprinkle of salt
sprinkle of pepper
3 Tablespoons vegetable oil
In a mixing bowl, add honey mustard, honey, vinegar, salt & pepper and whisk well. Add the oil and whisk until thickened (it's call emulsion when it looks silky and thickened).
You can use any kind of vinegar. I've used Balsamic vinegar, Red Wine vinegar, White Wine vinegar and all of them turned out nice. I've also used Dijon mustard and plain yellow deli mustard in place of honey mustard and it was really good. Just use what you have on hand in the pantry and fridge, it will taste yummy.
