Mommy's Pound Cake

This is a basic recipe for pound cake you can make small changes to create variations such as Lemon Pound Cake, Orange Pound Cake and even Vanilla Pound Cake with Chocolate Chips.


Pound Cake Recipe

3 sticks of butter, room temperature
3 cups sugar
5 eggs, room temperature*
3 cups all purpose flour
1/2 tsp salt
1/2 tsp baking powder
1 cup milk, room temperature*
1 tsp vanilla extract

Pound Cake Glaze

Mix together 1 cup powder sugar and 1 Tbsp milk and pour over cooled cake.

Preheat oven to 325 degrees F. Grease a tube pan or Bundt pan with Crisco and then flour and set aside. Cream butter and sugar together with beaters on high until light and fluffy. I use a hand mixer and set the timer for 5 minutes. Add eggs one at a time beating well after each addition. Sift dry ingredients together in a a separate bowl. Alternately add flour and milk to batter a little at a time. Beginning with flour and ending with flour. Add vanilla extract. Mix well. Spoon batter into prepared tube or Bundt pan. Bake for 90 minutes or until a toothpick inserted comes out clean. Let cake cool in pan for about 5 minutes and then invert onto a platter. Pour glaze over cooled cake and serve!

*I gather all the ingredients before beginning. I crack the eggs and put them in a large measuring cup to be easily poured into the batter. Then measure out the milk into a measuring cup and add the vanilla extract to it. While I'm creaming the butter and sugar, the eggs and milk come to room temperature. I have tried using butter to grease the pan but the cake sticks every time, use Crisco.

To make Lemon Pound Cake, substitute 1 cup of orange juice for milk and 1 teaspoon of lemon extract for vanilla extract. Glaze the pound cake: mix 1 cup powder sugar and 1 Tbsp lemon juice together and pour over cake after it has cooled for about 10 minutes.

To make Orange Pound Cake, substitute 1 cup of orange juice for milk and 1 teaspoon of orange extract for vanilla extract. (I've used Sunny D in the past and it's wonderful!) Glaze the pound cake: mix 1 cup powder sugar and 1 Tbsp orange juice together and pour over cake after it has cooled for about 10 minutes.

To make Vanilla Pound Cake with Chocolate Chips, proceed with above recipe and remove 1/4 cup flour mixture and toss with 1-1/2 cups chocolate chip morsels. Then after you have combined everything together, add the flour and chocolate chips and mix thoroughly. Tossing the chips in flour will help suspend them in the batter and keep them from sinking as the cake bakes. You can do this with nuts, raisins, etc...
