Aunt Kristi made this and it was so good! And it's super easy to make:
Aunt Kristi's Key Lime Pie
1 (14 oz) can sweetened condensed milk
1 (8 oz) block cream cheese, softened
1/2 cup freshly squeezed lime juice
1 Tablespoon lime zest
Graham cracker crust
non-dairy whipped topping (cool whip)
Blend sweetened condensed milk and cream cheese together with hand mixer. Add about 1/4 cup of cream cheese mixture to lime juice and blend well. Then add the juice and zest to the rest of the cream cheese mixture, blend well. (This is called tempering. The juice can curdle the cream cheese mixture.) Pour into the graham cracker crust. Top with cool whip and chill for at least 4 hours (overnight is best).
