This is chocolate lovers' layered delight. I was a member of the Kindergarten Mother Club in Girard, Illinois, for your Mother's class. Her teacher, Mrs. Garbin, decided to do a cookbook with the mothers in the class. This is Mrs. Garbin's recipe. Absolutely yummy! (You can substitute other puddings for chocolate such as butterscotch, banana, etc...)
Chocolate Nut Dessert
First Layer: (it's a lot like a shortbread crust)
3/4 cup butter, room temperature.
1 3/4 cup flour
3/4 cup pecans
Chop pecans in food processor.
Add butter and flour.
Process until all combined and then press in a 9" x 13" baking pan and bake for 15 minutes at 350 degrees. Let cool.
Second Layer:
1 cup confectioner's sugar
1 8 oz., package Cream Cheese, room temp.
1 1/2 cups non dairy whipped topping, such as Cool Whip, thawed
Blend well and spread on first layer.
Third Layer:
2 small packages instant chocolate pudding.
3 cups milk
Beat together for 2 minutes. Spread over second layer.
Fourth Layer:
Spread a layer of Cool Whip and sprinkle with chopped pecans (I used chocolate curls.)
*Best results, chill overnight before serving.
