Chicken Salad
















We love to eat chicken salad for luncheons and tea parties.  This is my favorite!
Chicken Salad
3 cups chopped cooked chicken (or 1 rotisserie chicken)
1-1/2 cup shredded Swiss cheese
1/2 cup finely chopped celery
1/2 cup dried cranberries
3 Tablespoons chopped fresh parsley or 1 Tablespoon dried parsley
1/2-1 cup mayonnaise
2 Tablespoons honey mustard
1/2 teaspoon black pepper

Combine everything into a large mixing bowl and serve on croissants or profiteroles.

This looks yummy. We'll be taking lots of chicken salad for "dinner at the pool" nights.
