I've mentioned before about the number of great people I've met through blogging. I tried an easy "no-knead" bread from Gayle at Grocery Cart Challenge. There really is no need to knead! The baked bread reminds me of the bread we can get at the Publix bakery. It's really yummy!
Peasant Bread
2-1/4 teaspoon yeast (1 pkg)
2 cups hot water (110 degrees F) divided
4 cups all purpose flour
1 teaspoon salt
1 Tablespoon sugar
1 Tablespoon melted butter
Dissolve yeast in 1 cup hot water for 5 minutes. In a large bowl, combine flour, salt and sugar. Add yeast water to flour mixture and add remaining 1 cup of water. Stir well, it will be very sticky. Cover with a tea towel and rise for 1 hour in a warm place. Grease two pans and divide the dough between the pans. Brush tops with melted butter and sprinkle with topping (poppy seeds, garlic bread seasoning, Parmesan cheese, cinnamon sugar mix, sesame seeds). Let rise again covered for another 45 minutes. Bake at 350 degrees F for 30 minutes until golden brown. Let cool on a rack and serve or freeze in a gallon bag.

Anxious to try the Peasant Bread recipe. What size pans did you use? Were they loaf pans, or something else? Thanks in advance.
You can use any oven proof pans you have. Cake pans, loaf pans, round corning ware bowls (the oven proof kind). They all work well.
