I love cole slaw on hot dogs, BBQ sandwiches and as a side dish. This is a reminiscent of the cole slaw your Great Poppy used to make.
1 head of cabbage
1 small or 1/2 large carrot, shredded
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 Tablespoon apple cider vinegar
1/4 cup mayonnaise
Celery seed (optional)
Shred the cabbage and combine with the carrot in a large bowl. In separate small bowl, mix together the rest of the ingredients and stir well. Pour the mixture over the shredded cabbage and combine really well. Cover and refrigerate for a few hours so the cabbage can wilt down.
Sprinkle with celery seed if you like.
