This is a very versatile recipe to use when making any kind of fruit muffin. You can use anything from peaches to blueberries...but always use what's in season for the best tasting muffin!
Fruit Muffins
2 eggs
1/2 cup applesauce
1/4 cup oil
1 cup sour cream
1 teaspoon vanilla extract
1/2 cup honey
1 cup flour
1 cup whole wheat flour
1 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 cups fresh fruit (chop any large fruit into pieces) blueberries, strawberries, pineapple, peaches, raspberries, blackberries...etc
Mix the eggs, applesauce, oil, sour cream, vanilla extract and honey together. In a separate bowl, mix together the flours, baking soda, powder, salt and cinnamon. Sprinkle about 1/4 cup of the flour mixture over the fresh fruit and toss to coat. Pour the flour mixture into the wet ingredients and mix well. Fold in the flour-coated fruit and mix lightly so you don't beat up the fruit. Carefully spoon batter 2/3 full into paper lined muffin tins. Bake at 400 degrees F for 20-25 minutes, cool in pan for a few minutes then move to cooling rack to cool completely.
