Old Fashioned Fudge Cake

After experimenting with several chocolate cakes and frosting recipes, I've finally got the most perfect chocolate fudge cake.

Old Fashioned Fudge Cake
2 cups sugar
2 cups all purpose flour
1 cup unsweetened cocoa powder
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup butter, melted
2 teaspoons vanilla extract
1 cup boiling water

Preheat oven to 350 degrees F.  Grease and dust with cocoa powder two 9" round cake pans.  Cut 9" rounds from parchment to place in the bottom of the pans.

In a large bowl, whisk together sugar, flour, cocoa, baking powder, baking soda and salt.  Add eggs, milk, butter and vanilla, mix for 2 minutes on medium speed of mixer.  Stir in the boiling water last.  Batter will be very thin.  Pour evenly into prepared pans.  Bake at 30-35 minutes until it test done with a toothpick.  Cool in pans for 10 minutes, remove and cool completely on wire racks.

Fudge Frosting
14 Tablespoons of butter
1/4 cup cocoa powder (heaping)
1/3 cup milk
1 teaspoon vanilla extract
4 cups powdered sugar

Melt butter in pot on stove top.  Add cocoa and whisk until smooth.  Turn off heat.  Add milk, vanilla, powdered sugar.  Whisk until smooth.

To assemble:
Place 1 cake round on platter and pour enough fudge frosting to cover.  Top with second cake round and pour frosting over the top and allow to run down the sides.  Use a rubber spatula to smooth around the sides.

This is the best chocolate fudge cake I've ever eaten.
