Oven Fried Chicken

In the early 1990's I was really big into Pampered Chef. I love it even now, but I don't spend as much money on it as I did when I was single. One of my all time favorite recipes I learned from a Light and Healthy cookbook was Oven Fried Chicken. I can't find the cookbook but this is how I remembered making it:

Pampered Chef Oven Fried Chicken

4 chicken breasts, boneless & skinless
1 egg white, slightly beaten
1 garlic clove, finely minced or pushed through the garlic press
2 cups corn flake cereal, crushed
1 tsp salt
1 tsp pepper
1/2 tsp paprika

Preheat oven to 400 degrees F. In a pie plate, combine egg white & minced garlic. In separate pie plate, combine corn flakes & seasonings. Pass the chicken through the egg mixture and then into cereal and then onto a stone pan (or you can put oven safe cooling racks on a cookie sheet and put the chicken on those and bake them...chicken gets crunchy all the way around). Bake for 25-30 minutes or until chicken is cooked all the way through.

So the other day I got my Woman's Day magazine in the mail and found a great recipe with similar approach only it had different coatings to use.

Oven Fried Chicken

8 pcs of chicken
1 large egg
crunchy coating (below)
nonstick spray

Heat oven to 400 degrees F. Line a jelly roll pan or shallow roasting pan with tin foil. Coat with nonstick cooking spray. Remove skin from chicken. In a pie plate or shallow bowl, slightly beat the egg. Coat a few pieces of chicken in egg at a time. Place desired crunchy coating in a plastic food storage baggie. If using tortilla chips, stuffing mix, french fried onions, cheese crackers or honey mustard pretzels, close bag and crush with a rolling pin. put 1 or 2 pieces of chicken in the baggie at a time and shake to coat chicken evenly. Place a prepared pan; lightly coat chicken with cooking spray. (if using fried onions or honey mustard pretzels, do not spray) Bake 35-40 minutes until chicken is cooked through and coating is browned.

Now for the best part: the Crunchy Coatings:

Italian: 1 cup wheat germ, 1/3 cup grated Parmesan cheese, 1/4 tsp garlic salt, 1/4 tsp pepper

Honey Mustard: 3 cups honey-mustard pretzel pieces, 1/4 tsp pepper

Mexican: 3 cups tortilla chips, 2 tsp chili powder, 2 tsp ground cumin

Krispie Ranch: 1-1/2 cup rice krispie cereal, 1 envelope ranch dressing mix

Cheesy: 3 cups cheese crackers, 1 tsp onion powder, 1/4 tsp pepper

Herb: 1-1/2 cup herb stuffing mix, 1 tsp onion powder, 1 tsp paprika

Curry: 3 cups french fried onion rings, 2 tsp curry powder

The Krispie Ranch is yummy!
