Potato Soup

This is a super easy and delicious Potato Soup recipe.  It's yummy when topped with bacon, cheese, sour cream and chives.  Here's how I do it:

Potato Soup 
3 tablespoons butter or oil $.27
1 onion, finely diced $.88
1 carrot, diced $.15
1 stalk of celery, finely diced $.17
1/4 cup flour $.05
4 cups chicken broth (or vegetable broth for vegetarian soup) $1.00 (on sale)
3 or 4 potatoes, diced $.30-.40
1 cup milk $.22
salt and pepper, to your liking

Prepare the ingredients if not already.

In large Dutch oven, heat butter or oil over medium heat.  Saute onion until lightly golden brown.  Add carrots and celery and saute for 1 minute.

Sprinkle the vegetables with flour and toss around for another 1 minute

Pour chicken broth over vegetables and whisk together.  Bring to boil and reduce to simmer for 10 minutes.  Add potatoes and pour in milk; stire well and bring to boil then reduce to simmer for 15 minutes.  Add seasonings to your liking.

Serve with bacon, cheese, sour cream, chives or whatever you like.  This is a sprig of thyme from an herb garden on my kitchen counter.

Make your own Potato Soup and only spend $3.14 for 4-6 people, or about $.79 per serving.  Leftovers freeze well. Thaw in refrigerator and heat on the stove top.

* TIPS:   I have substituted evaporated milk for regular milk.  Also, I've added a small pouch of flavored mashed potatoes (Idahoan) for a more creamy texture.  I've left out the carrot, because I didn't have one.  It turns out yummy any way you do it.
