Black Bean Soup

This is a yummy warm soup, great for the cold winter months!  Serve with a side of cornbread.

Black Bean Soup with Cumin & Tomato
2-1/2 cups chicken stock or vegetable broth
2-15 oz cans black beans, drained & rinsed (or 3 cups cooked, dried beans)
1-14 oz can diced tomatoes, undrained
2 teaspoon onion powder
1 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon cayenne powder
1/4 teaspoon salt
1 smoked turkey leg (or wing)
sour cream (optional)

Pour chicken stock into medium saucepan.  Puree about 1/2 cup of beans and add to the pot.  Add whole beans and remaining ingredients except sour cream.  Stir until puree is absorbed.  Simmer over low heat 20-30 minutes.  Serve with dollop of sour cream, if desired.
