Creamy Fruit Cups

This is a yummy recipe we make for a local tea room.  Nana gave me the "secret recipe", so I'll share it with you.


Creamy Fruit Cups
8 oz softened cream cheese (I use low fat, just because)
1/4 cup sugar
15 oz can crushed pineapple, drained (reserve juice for another purpose)
1/2 cup chopped pecans (optional)
14 oz can mandarin oranges, drained (reserve juice for another purpose)
8 oz non-dairy whipped topping
maraschino cherries

In large bowl, mix cream cheese and sugar until creamy.  Add pineapple and pecans (if using) mix well.  Carefully fold in mandarin oranges, so they don't get broken up too bad.  Fold in whipped topping, remembering the mandarin oranges.  Scoop into tin foil muffin liners and top with a maraschino cherry.  Freeze until ready to serve.

To serve, allow to thaw slightly and enjoy!
