1-2-3-4 Cupcakes

I've been on the search for an easy, no fuss recipe for cupcakes and cakes.  This is pretty easy and really yummy!

1-2-3-4 Cupcakes
1 cup butter
2 cups sugar
3 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
4 egg whites
1 teaspoon vanilla extract
1 cup milk

In a mixing bowl, cream the softened butter and sugar until light and fluffy.  Sift the flour, baking powder and salt in a separate bowl.  Whisk the egg whites until frothy and add to the butter mixture, beat on high for 2 minutes.  Add half the flour mixture and beat lightly.  Pour in the milk and vanilla and beat lightly until incorporated.  Finish with the rest of the flour mixture and beat on low until mixed.

Scoop into muffin liners and bake at 325 for 18-22 minutes until toothpick test done.
